Ratafia de Champagne
The Ratafia is a typical Champagne aperitif (no bubbles).
It is a fusion of two parts, on the one hand the must and on the other hand a portion of alcohol (Fine de Champagne). The addition of alcohol stops the alcoholic fermentation. The wine corresponds to the category of “vin doux naturels 18%) but not a spirit. After two years of aging on the barrel, the ratafia gives a fruity drink, sweetened and alcoholised. Serve very cool, it will be appreciated as an aperitif or with dessert.
